The Wine
The Sparkling wine Grande Cuvée Brut of the Kettmeir winery is produced with 100% Pinot Bianco grapes that grow on the medium-high hills of Oltreadige and Bassa Atesina between 500 – 700 meters above sea level. Here the soil is of calcareous origin, rich in clay.
THE WINEMAKING
After the manual harvesting that takes place in the first half of September, the selected grapes are brought to the cellar for winemaking. Soft pressing is followed by fermentation in steel tanks at a controlled temperature of 16 ° -18 ° C. The wine ages until the spring following the harvest in stainless steel vats and is then moved to the autoclave where it ages on the lees for about 6 months.
THE TASTING
Pale straw yellow, the perlage is fine and persistent. The aroma is fresh with pleasant fruity hints that blend well with aromatic notes to close with a slight puff of yeast. Dry and bubbly on the palate with a good body and a good persistence.
FOOD PAIRINGS
Perfect for the classic aperitif, it goes well with fish but also with vegetables and soft cheeses. Must try with sushi.
