THE WINE
The il mille sparkling wine from the Tunella winery is a blend of Pinot Nero and Ribolla Gialla grapes grown in the property’s vineyards in the eastern hills of Friuli. Il Mille is a sparkling wine obtained with a long Charmat method, which immediately won over lovers of bubbles and, in a short time, became one of the flagships of the cellar.
The Tunella winery grows all its grapes according to the canons of integrated anti-parasitic control with low environmental impact.
THE WINEMAKING
The harvesting of the grapes is strictly manual, and only the selected ones go to the cellar. The winemaking is strictly off-white with very soft pressing of the grapes. The free run must is statically decanted. The wine then ferments for an extended period in second and third passage French oak barriques. In the January following the harvest, the wine is moved to an autoclave for secondary fermentation at a temperature that oscillates between 13° C and 14° C. Follows a long maturation and refinement “sur lies” in the autoclave completed by periodic agitation of the yeasts on the fine lees. After bottling, the wine rests in the cellar for at least six months before being released.
THE TASTING
Bright straw yellow with a fine and persistent perlage. The aroma of this sparking wine is pleasantly fresh and complex, with delicate fragrances of tropical fruit that leave room for floral hints of hawthorn to finish with light touches of vanilla. It is well structured on the palate, round and complex, with a good correspondence between the aromas and the flavour. Long and persistent finish.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, white meats, and soft cheeses.
