THE WINE
The Perlé Zero Dosage sparkling wine from the Ferrari winery comes from a selection of Chardonnay grapes grown in the property’s vineyards located in the most suitable areas for cultivating vines in the Trento DOC denomination. These Chardonnay particles are wine made in steel and matured in wood before being bottled with yeasts for the second fermentation. This Zero Dosage is a unique and irresistible Trento DOC.
THE WINEMAKING
Each Perlé Zero cuvée takes the name of the year it was bottled; these are vintages previously wine made in steel and then refined in both wood and glass. The Zero14 cuvée comes from the 2009, 2011, 2012 and 2013 vintages, bottled in 2014 and then aged on selected yeasts for six additional months.
THE TASTING
Straw yellow with golden reflections and a very fine and persistent perlage. The aroma is exceptionally fresh, with pleasant notes of aromatic herbs alternating with hints of lemon balm and chalk to finish with puffs of lemon cream. If left to breathe in the glass, you can feel pleasant hints of pineapple and anise. Dry on the palate with a pleasant mineral note and a long, deep and saline finish reminiscent of Himalayan salt and citrus peel.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with all fish-based dishes but also with white meat.
