The Sparkling wine Talento Pas Dosé Golden Label
The Talento Pas Dosé Gold Label from the Pittaro winery is a quality sparkling wine. Produced with Chardonnay (80%) and Pinot Blanc (20%) grapes grown on the Grave plains of Friuli where the alluvial soil is poor but particularly suitable for growing vines.
THE WINEMAKING
The harvest, strictly manual, takes place at the end of August and once in the cellar, the winemaking starts with the soft pressing of the grapes. For the majority of the must, the fermentation takes place at controlled temperature and the wine stays in steel until bottling. A small percentage of Pinot Blanc is fermented in barriques. The assembly of the cuvée is done at the end of the winter and bottling happens in the late following spring. Once bottled, the wine refines “sur lie” for at least 7 years. After the “remuage” and “degorgement” phases, the wine rests at least 2 months in the cellar before being placed on the market. The disgorgement date is indicated on the label with the month and year.

Intense straw yellow with golden reflections and a fine and persistent perlage. The aroma is impressing with hints of almonds, bread and baked pastries that blend with citrus notes to leave room for fruity notes of apple, pear and peach; closing with slight hints of balsamic notes of eucalyptus. Creamy and fresh on the palate, a sparkling wine with an excellent structure, very well balanced. Excellent persistence and also the correspondence between aroma and taste.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish even raw. Must try with Japanese tempura.
