THE WINE
The Spezieri wine from the Col D’Orcia winery is produced with Sangiovese and Ciliegiolo grapes with small quantities of Cabernet Sauvignon and Merlot all grown in the vineyards owned by the winery, located in Montalcino, on the Sant’Angelo hill overlooking the Orcia river. The winery named it this way to remember the spice makers who, in the Middle Ages, imported and expertly mixed the spices, which they then sold. Likewise, the cellar skillfully mixes the aromas and flavours of the grapes to obtain a fresh and harmonious wine perfect for accompanying everyday lunches and dinners.
Both the processing in the vineyard and the winemaking in the cellar follow the strict protocols of the organic regulations.
THE WINEMAKING
The harvest is strictly manual and occurs when the grapes have reached the proper ripeness. Once in the cellar, the grapes macerate in steel for 8-10 days at a temperature that never exceeds 26°C; this choice preserves the intense fruity flavour. Fermentation occurs in steel; 20% of the Sangiovese undergoes malolactic fermentation in barriques. The wine is bottled early to capture all the freshness. After a few months of refinement, the wine is placed on the market.
THE TASTING
Intense ruby red with violet reflections; the aroma is intense and pleasantly fruity with delicate hints of small red fruits that alternate with notes of cherry to continue with light spicy sensations. It is well structured on the palate with soft and persistent tannins. Excellent correspondence between aromas and flavour with a long, persistent and pleasantly savoury finish.
FOOD PAIRINGS
Excellent with red meat and pasta with meat sauces. Try it with mixed cold cuts.
