THE WINE
The Ribolla Gialla sparkling wine brut from the Teresa Raiz winery is one of the flagships of the company; produced with 100% Ribolla Gialla grapes, grown between Rosazzo and Prepotto in the province of Udine in Friuli Venezia Giulia.
THE WINEMAKING
After the manual harvest, only the selected grapes are brought to the cellar for winemaking which begins with a very soft pressing. The must then ferments on the lees in stainless steel at a controlled temperature of 16 ° C. The spring following the harvest, the wine is moved in the autoclave for the second fermentation (Martinotti method). After bottling the wain ages for a further period in the cellar before been placed on the market.
THE TASTING
Brilliant straw yellow, the perlage is fine and persistent. The aroma is delicate with pleasant fruity hints that intertwine well with floral notes. Fresh on the palate with excellent minerality and a long and persistent finish.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish, vegetables but also with medium hard cheeses. Try if throughout the meal with a fish dinner.
