THE WINE
The Perlé Bianco sparkling wine from the Ferrari winery comes from a selection of Chardonnay grapes grown in the property’s vineyards located in the most suitable areas for cultivating vines in the Trento DOC denomination. These are particles of Chardonnay that the winery’s oenologists believe are more suitable for long ageing. The result is a very elegant, harmonious and always perfect bubble.
THE WINEMAKING
The harvest of the grapes is strictly manual, and only the selected ones go to the cellar for winemaking. Each particle is harvested separately. Once in the cellar, the winery proceeds with the classic white winemaking, and each particle is wine made separately. Once the wine has reached the right level of refinement, the cuvée is created and bottled with the yeasts for the second fermentation. The wine then rests in the bottle for at least six years.
THE TASTING
Intense yellow with golden reflections and a very fine and persistent perlage; the aroma is delicate with pleasant floral notes that alternate with hints of candied citron and quince, which in turn leaves room for suggestions of sea breeze to close with puffs of spiced bread crust. Very soft on the palate; the balance between freshness and flavour is perfect. Persistence is also excellent.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with all fish-based dishes; also with sushi and fried fish. Try it with pizza.
