THE WINE
The Perlé Nero extra brut sparkling wine from the Ferrari winery comes from a selection of Pinot Nero grapes grown in the property’s vineyards in the most suitable areas for cultivating vines in the Trento DOC denomination. These are mountainous areas about 400 meters above sea level. This Perlé Nero is the first and only sparkling wine from the Ferrari winery produced with 100% red grapes, an experiment that began forty years ago, which allowed Ferrari to create a wine of great elegance and quality.
THE WINEMAKING
The grape harvest occurs in mid-September; it is strictly manual, and only the selected ones go to the cellar for winemaking. Each particle is harvested separately. Once in the cellar, the winery starts with the winemaking in white (without contact with the skins), and each particle is wine made separately. Once the wine has reached the right level of refinement, the cuvée is created and bottled with the yeasts for the second fermentation. The wine then rests in the bottle for at least six years.
THE TASTING
Golden yellow with brilliant reflections and a very fine and persistent perlage; the aroma is lovely and complex with pleasant hints that range from fruity to floral, moving on to mineral and ending with toasted. This sparkling wine is pleasantly soft on the palate, with perfectly balanced freshness and flavour. The finish is persistent with pleasant citrus notes.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with all fish-based dishes. To try with salmon tartare.
Wine is purchased directly from the producer and stored in cold rooms.
