The Wine
The extra dry “Strada di Guia 109” sparkling wine from the Foss Marai winery is produced with 100% Glera grapes grown in the vineyards owned by the winery and located on the Valdobbiadene hills and, more precisely, on the Stada Guia 109 from which this sparkling wine takes its name. This prosecco is undoubtedly one of the winery’s flagship wines that have enhanced the characteristics of the Glera grape best.
THE WINEMAKING
The harvest is manual, and only the selected ones are brought to the cellar for winemaking. Once in the cellar, the winemaking starts with a soft pressing of the berries. Fermentation at controlled temperature follows in steel vats where the must rests for three months. The wine is then moved to an autoclave (Martinotti method) for the sparkling process. Foss Marai is one of the best known and most appreciated names in the world of Prosecco, a winery attentive to quality that offers precious products to the bubbles lovers.
THE TASTING
Straw yellow with greenish reflection and a fine and persistent perlage; the aroma is intense with pleasant fruity hints of green apple that alternate with citrus notes to give way to puffs of acacia flowers. Fresh on the palate with a good correspondence between aromas and flavour. Excellent drink and good persistence.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish, even raw and white meats.
