The Trento DOC Cuvée 28 from the Rotari winery is a brut sparkling wine crafted from 100% Chardonnay grapes, cultivated in the estate vineyards on the most suitable hills north of Trento. This sparkling wine boasts a strong character and a refreshing taste, making it perfect for any occasion.
THE WINEMAKING
The harvest is strictly manual, and only the selected grapes are brought to the cellar for winemaking. After the classic winemaking in white, the cuvée is bottled, with carefully selected yeasts, for the second fermentation. The wine ages in the bottle on the lees for at least 36 months.
Tasting the Trento DOC by Rotary
Straw yellow with a fine and persistent perlage; the aroma is intense with pleasant hints of ripe yellow fruit that alternate with notes of hazelnut that leave room for a touch of vanilla on the finish. Very well balanced on the palate, well structured with a pleasant acidity and a pleasing freshness. Long and mineral finish.

Excellent as an aperitif. Perfect for any meal, mainly if the menu is fish and shellfish based. A must try with sushi
