THE WINE
The Valpolicella Superiore from the Rocca Sveva winery is a blend of Corvina, Corvinone and Rondinella grapes grown on the hills east of Verona in Veneto; in this area, there is the most important regional DOC and DOCG known throughout the world.
Rocca Sveva is a charming medieval village transformed into a winery of excellence. The Valpolicella Superiore is part of a wine selection from the Veronese tradition. This Valpolicella is an elegant, well-structured wine that pairs perfectly even with fish.
THE WINEMAKING
The harvest is strictly manual and only the selected grapes go to the cellar for winemaking beginning with the maceration on the skins in steel tanks at a controlled temperature for about fifteen days. After racking, the wine ages for at least ten months in large oak barrels and, after assembly and bottling, the wine rests for a few more months in the cellar before being released on the market.
THE TASTING
Bright ruby red; the aroma is intense with pleasant hints of fruit, with cherry and berries prevailing. The Valpolicella Superiore is a well-structured wine on the palate with elegant tannins that integrate very well and a long and persistent finish.
FOOD PAIRINGS
The Valpolicella Superiore from the Rocca Sveva winery pairs well with white meats, game birds and white fish such as cod. Try it with ” baccalà alla vicentina” codfish.
