THE WINE
The Kaplja from the Damijan Podversic winery which in english means drop is a bland of Chardonnay (40%), Friulano (30%) and Malvasia Istriana (30%).
THE WINEMAKING
After manual harvesting that takes place only when the grapes are fully ripe, the fermentation phase begins, on the skins for 60 to 90 days, in conical truncated oak vats using only indigenous yeasts. The wine is then left to age for about 36 months in large oak barrels (20 or 30 hl) and after bottling, it rests for an additional 12 months before being placed on the market.
THE TASTING
Deep gold yellow with very intense aromas; notes of ripe yellow fruit get mixed with hints of sweet spices to close with light citrus puffs. Elegant and refined on the palate with a perfect balance between flavor and acidity. Very persistent. A must try!
FOOD PAIRINGS
It goes well with fish (also fried) and white meat. Must try with the spicy Indian cuisine

THE WINERY
We are in Gorizia, near the border with Slovenia; this is where Damijan Podversic created the winery of his dreams, just as he wanted it. Damijan, who at just 40 years of age already has a vast experience, has always wanted to recover and enhance old abandoned vineyards in the hills around Gorizia which have always been particularly suited to viticulture.
