THE WINE
The Verdicchio Riserva “Plenio” from the Umani Ronchi winery is 100% Verdicchio grapes grown on the Verdicchio hills in the Marche region. Verdicchio Riserva is a structured and complex white wine that, as required by the regulations, ages for eighteen months before being put on the market.
The name Plenio comes from the Latin Plenum and indicates the complexity, fullness and structure. Produced since 1995, the grapes come from the village of Cupramontana, between 250 and 350 meters above sea level, one of the areas historically most suited to the production of Verdicchio.
THE WINEMAKING
The harvest is strictly manual and occurs between the end of September and the first ten days of October when the grapes are fully ripe. Once in the cellar, the grapes are softly pressed, and only the free-run must is cooled and left to decant statically. 60% of the must ages in steel tanks at a controlled temperature between 16 and 18°C and lasts for about 10-15 days depending on the vintage, while the remaining 40% ferments in large 50hl oak barrels; the wine ages twelve months in the fermentation tanks. After assembly and bottling, the wine rests for another six months in the cellar before being released onto the market.
THE TASTING
Intense straw yellow with golden reflections. The aroma is elegant, with pleasant hints of ripe fruit that alternate with notes of bitter almond and honey that leave room for puffs of aromatic herbs to close with balsamic hints; the anise, the aroma characterizing this grape variety, is very well perceived. Soft and well-balanced on the palate. The Verdicchio Riserva “Plenio” is a fresh wine with a good savoury note and an almost perfect correspondence between aromas and flavour. The persistence is also excellent.
FOOD PAIRINGS
It goes well with white meat, baked fish and soft cheeses. Try it with stuffed pasta like tortellini in broth.
