THE WINE
Pelago from the Umani Ronchi winery is Montepulciano grapes with a percentage of Cabernet Sauvignon and Merlot grapes; the winery aimed to create a wine with the personality of the native Montepulciano vineyard and the aromatic profile of the Bordeaux grapes. In 1997 this wine was awarded by the International Wine Challenge in London and has since entered the list of the most sought-after wines in the world.
The name Pelago derives from the ancient Greek pelagos, meaning sea; this name highlights the marine character and the organoleptic peculiarities typical of grapes growing by the sea.
THE WINEMAKING
The harvest is manual in crates, starting at the beginning of September with the Merlot, continuing at the end of September with the Cabernet Sauvignon and ending in October with the Montepulciano. Once in the cellar, the grapes are softly pressed and fermented in steel at a controlled temperature of 27-29° for about 15 days using only indigenous yeasts. The wine ages in 225-litre French oak barrels for at least fourteen months. After assembly and bottling, the Pelago rests for another twelve months in the cellar before being released onto the market.
THE TASTING
Intense ruby red with purple highlights; the aroma is refined with pleasant hints of berries that alternate with notes of fresh flowers and coffee that give way to hints of black pepper, tobacco and liquorice to continue with puffs of freshly cut grass and vanilla. Full-bodied and very well-balanced on the palate. The tannins are noticeable but are well-smoothed and silky. The correspondence between the aromas and the flavour is almost perfect, with a long and very persistent finish.
FOOD PAIRINGS
Pelago pairs well with red meat, game and hard cheeses. Try it with beef.
