THE WINE
The Verdicchio Castelli di Jesi Superiore from the Umani Ronchi winery is 100% Verdicchio grapes grown on the Verdicchio hills in the Marche region. The “Vecchie Vigne ” label was created to enhance four hectares of old vineyards on the Montecarotto estate.
The vines date back to the early 1970s, their position, the work in the vineyard and then the attention in the cellar, allow the production of a Verdicchio capable of fully representing the typicality of this grape.
THE WINEMAKING
The harvest is strictly manual and occurs between the end of September and the first ten days of October when the grapes are fully ripe. Once in the cellar, the grapes are softly pressed, and only the free-run must is cooled and left to decant statically. Fermentation occurs in steel tanks at a controlled temperature between 16 and 18°C that lasts about 10-15 days depending on the vintage. The wine ages for about ten months in cement tanks, and after assembly and bottling, it rests in the cellar for another six months before being released onto the market.
THE TASTING
Bright straw yellow with greenish reflections; the aroma is broad with pleasant fruity hints of pear that alternate with notes of broom and chamomile to close with scents of sage and puffs of hazelnut. Elegant, fresh and dry on the palate. This Verdicchio Castelli di Jesi Superiore is well-structured with a beautiful acidic note that invites you to drink; it has a long and persistent finish.
FOOD PAIRINGS
It goes well with white meat and baked fish. Try it with ricotta and spinach cannelloni.
