THE WINE
The Vespa Rosso from the Bastianich winery is a blend of Merlot and Refosco dal Peduncolo Rosso grapes from the vineyards owned by the winery that are located on the hills of Buttrio, Premariacco, Cividale and Prepotto in Friuli Venezia Giulia.
THE WINEMAKING
After the harvest, the grapes are selected on sorting benches and subsequently de-stemmed, crushed and sent in stainless steel tanks at a controlled temperature between 25 and 27 ° C for fermentation. After maceration which lasts about 15 days, the grapes are pressed with a vertical press to extract only the sweetest tannins. At the end of fermentation, the various batches of wines that make the Vespa Rosso are placed separately in oak barriques; new for 30% and of second passage for 70%; here the wines begin the aging phase which lasts 18 months. The wines are then blended and bottled and left to rest for another 12-18 months in the cellar before being placed on the market.
THE TASTING
Ruby red with garnet highlights. The aromas are intense and complex; notes of berries jam are followed by hints of tobacco ending with scents of fine woods. The taste is fine, soft, intense and enveloping, the tannins are velvety. Excellent balance and persistence.
FOOD PAIRINGS
Perfect with red meat and hard cheeses. Must try with fillet in pepper sauce.
