The Classic Method Brut de la Cros by Tenute Vidi
THE WINEMAKING
The grapes are hand-harvested, and the selected ones go quickly to the cellar for winemaking. The process begins with a gentle pressing. Fermentation occurs in steel tanks at a controlled temperature. The wine ages on the lees in steel until the end of May following the harvest, when it is bottled on the lees for a second fermentation, adhering to the rigorous Trentodoc specifications; the sparkling wine then ages for over forty-two months on the lees. After disgorgement, it rests for at least four more months in the cellar before being released to the market.
Tasting the Classic Method
Intense straw yellow with fine, persistent bubbles. The aroma is complex, with pleasant notes of bread crust, vanilla, and mint mixed with hints of sage, closing with candied orange puffs. On the palate, it is fresh and elegant, well-structured, and has excellent acidity that encourages further sipping. The finish is long and pleasantly mineral.
FOOD PAIRINGS
Vidi Brut de la Cros Trentodoc is excellent as an aperitif and pairs perfectly with white meat and fish dishes throughout the meal. It’s also a great choice for sushi.
