The Wine
The Champagne Method Vintage Brut Sparkling Wine Athesis of the Kettmeir winery is a bland of Pinot Bianco (30%), Chardonnay (60%) and Pinot Nero (10%) grapes that grow on the medium-high hills of Oltreadige and Bassa Atesina between 450 – 700 meters above sea level. Here the soil is of calcareous origin, rich in clay.
THE WINEMAKING
After the manual harvesting that takes please in the second half of September, the 3 vines are wine made separately. Soft pressing is followed by fermentation in steel tanks at a controlled temperature of 14 ° -16 ° C. The wine then ages until the spring following the harvest in stainless steel vats and it is than bottled for the second fermentation. The bottles rests on the lees for at least 24 months, before proceeding with the dégorgement.
THE TASTING
Bright straw yellow with a very fine and persistent perlage. The nose immediately perceives the fruity aromas that are well intertwined with a balanced note of yeast. Fresh and dry on the palate with excellent persistence and a nice aftertaste of dried fruit.
FOOD PAIRINGS
Perfect for the classic aperitif, it also goes well with light appetizers. Excellent throughout the meal if the menu is fish.
