The Wine
The vintage brut “Guia” sparkling wine from the Foss Marai winery is produced with 100% Glera grapes grown in the vineyards owned by the winery and located on the Valdobbiadene hills and, more precisely, in the Guia area from which this sparkling wine takes its name. This prosecco is certainly one of the top wines of the winery and is produced with the grapes of the company’s historic vines.
THE WINEMAKING
The harvest is manual, and only the selected ones are brought to the cellar for winemaking. Once in the cellar, the winemaking starts with a soft pressing of the berries. Fermentation at controlled temperature follows in steel vats where the must rests for three months. The wine is then moved to an autoclave (Martinotti method) for the sparkling process. Foss Marai is one of the best known and most appreciated names in the world of Prosecco, a winery attentive to quality that offers precious products to the bubbles lovers.
THE TASTING
Brilliant straw yellow with a fine and persistent perlage; the aroma is delicate with pleasant hints of orange blossom that intertwine with fruity notes of green apple, citrus and white-fleshed fruits. Rich, enveloping and intense on the palate with an excellent correspondence between aromas and flavour. Perfect drink with a fresh and persistent finish.
FOOD PAIRINGS
Perfect with raw fish and shellfish but also with white meats and mixed cold cuts. A must try with chocolate.
