The sparkling wine Vintage Collection Dosage Zéro by Ca’ Del Bosco winery
Here is the Vintage Collection Dosage Zéro from the Cà Del Bosco winery. We are talking about one of the three wines that complete the company’s trilogy of prestigious wines.
The cuvée is made up of 76% Chardonnay, 16% Pinot Noir and 8% Pinot Blanc. The Chardonnay grapes come from 18 vineyards located in the Municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. Instead, the Pinot Noir grapes are from six vineyards in the Municipalities of Erbusco and Passirano. To conclude, there are two Pinot Bianco grapes located in the municipality of Passirano. All the vines are between 29 and 31 years old.
THE WINEMAKING
The rigorously manual harvest takes place in the second half of August. Once in the cellar. Each bunch is selected by hand and subjected to a particular bunch washing system.
After pressing in the absence of oxygen, all the musts of the base wines ferment for about five months in small oak barrels. The passage in the barrel allows maintaining the maximum aromatic complexity without losing the wine’s elegance,
Seven months after the harvest, the cuvée is created, i.e. the skilful union of 26 base wines. The wine thus obtained ages in the bottle on the lees for an average period of 48 months.
The dégorgement takes place in the absence of oxygen, using a system devised and patented by Ca’ del Bosco, which avoids oxidative shocks and further additions of sulphites, and makes this Franciacorta purer, more pleasant and long lasting.
Before being placed on the market, each bottle is numbered to guarantee its traceability.
Tasting the Vintage Collection Dosage Zéro by Ca’ Del Bosco
Straw yellow with a very fine and persistent perlage. The aroma is exquisite, with pleasant fruity hints of apple that intertwine with citrus notes. A unique sensation of warm bread crust gives way to a lovely touch of hazelnuts. Fresh and complex on the palate, this wine is well structured with an almost perfect balance; even the finish is unique with its bitter sensation and infinite persistence.

Perfect with fish and shellfish but also as an aperitif. Perfect throughout the meal if the menu is fish.
