THE WINE
The Sparkling Ribolla Gialla from the Collavini winery is its flagship product; it is with 100& Ribolla Gialla, grown in Corno di Rosazzo and Manzano (province of Udine). The vines are grown exclusively to obtain grapes suitable for producing a high quality sparkling wine base; the yield per hectare is about 80 quintals.
THE WINEMAKING
The strictly manual harvest takes place only in the morning after the breeze from the northeast has dried the thin veil of night humidity; only the selected grapes are brought to the cellar for winemaking. We are beginning with a delicate pressing of the grapes, followed by the natural decanting of the must for a whole night. The first fermentation at a controlled temperature of 14 ° C takes place partly in steel and partly in barriques.
The following spring, the Ribolla Gialla is moved to large horizontal autoclaves where it re-ferments very slowly at a constant temperature of 12 ° C. It Follows the ageing sur lies (on the lees) for a period that is never shorter than 30 lunar cycles. Once bottled, this Ribolla rests for farther 12 months in the cellar.
THE TASTING
Brilliant straw yellow with light greenish reflections and a very fine and persistent perlage; the aroma is elegant and delicate, pleasant fruity scents, among which nectarine, figs and green apple prevail, which intertwine with interesting mineral sensations. Very fresh on the palate, well structured, excellent correspondence between aromas and flavour and very long aromatic persistence.
FOOD PAIRINGS
Exceptional as an aperitif, perfect with fish but also throughout the meal if the menu does not include red meats and game.

THE WINERY
The history of Collavini begins in Rivignano (Friuli Venezia Giulia), in 1896 with Eugenio, the founder, who was the wine supplier of the noble families of Udine and of the shops. The winery management passes from Eugenio to his son Giovanni, who has to drive the company through two wars but, at the end of which, thanks to the rapid acceleration of the commerce, succeeds in establishing the success of the winery thanks to the quality of its wines… go to the winery page
