The wine from Monsupello
The Sparkling wine Brut from the Monsupello winery is a cuvée consisting of 90% Pinot Nero grapes and 10% Chardonnay, all sourced from the vineyards owned by the winery. The vineyards are meticulously maintained, from bud pruning to bunch thinning, which promotes better grape ripening and enhances the concentration of sugars and aromatic compounds.
THE WINEMAKING
The harvest is manual, using eighteen-kilo crates. Once the grapes arrive at the cellar, winemaking begins with soft pressing of the selected grapes. The free-run must, the initial juice extracted (approximately 45% of the total must), is clarified and left to ferment in stainless steel tanks at a controlled temperature of 18°C. Following a period of ageing in steel that varies depending on the vintage, the wine is bottled with yeast for secondary fermentation and left to rest for a minimum of thirty months at a consistent temperature of 14°C. After disgorging, the sparkling wine is matured for several additional months in the cellar before being released to the market.

This wine showcases a straw yellow colour with greenish reflections and features a fine and persistent perlage; the aroma is refined and elegant with delightful hints of cassis, complemented by scents of bread crust and brioche. It is soft and dry on the palate, with an excellent balance between the aromas and the flavour, leading to a long and persistent finish.

THE WINERY
The Monsupello winery was founded in 1893 in the municipality of Oliva Gessi, located in the heart of Oltrepò Pavese, by the Boatti family. Today, it is a family-run winery led by Carlo Boatti and his children, Pierangelo and Laura, which spans 50 hectares of vineyards.
