THE WINE
The Vitiano Bianco of the Falesco estate is a blend of Vermentino grapes for 70% and Chardonnay for 30% grown in Montecchio and Orvieto. We are in Umbria at about 300 meters above sea level, where the soil is generally clayey and calcareous.
THE WINEMAKING
The Chardonnay grapes are harvested in the first weeks of September, always during the early hours of the morning, to maintain the temperature of the grapes at 20 ° C. After pressing, the grapes are cooled and subjected to cryomaceration at 10 ° C for 4 hours. The Vermentino, on the other hand, is harvested at the end of September. The fermentation of the musts takes place in steel tanks separately, at a temperature of 13-16 ° C. The wine is then assembled, bottled and left to refine for a few months in the cellar before being placed on the market.
THE TASTING
Brilliant straw yellow. The aroma is pleasant with notes of white flowers alternated with hints of citrus and scents of vanilla to close with puffs of dried fruit such as peanut and almond. Solid and fresh on the palate, very pleasant and sapid with a good correspondence between aromas and flavour. Long finish.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with white meats and fish. A must try with vegetable omelettes.
