THE WINE
The Vitiano Rosso of the Falesco estate is a blend of Merlot, Cabernet and Sangiovese grapes in equal parts, which grow in Montecchio and Orvieto. We are in Umbria at about 300 meters above sea level, where the soil is generally clayey and calcareous.
THE WINEMAKING
The Merlot is harvested in the first weeks of September, while Cabernet and Sangiovese are harvested in the third decade of September. The winemaking occurs at different times between the three varieties and involves an extended maceration with numerous pumping over and punching down. The wine is then assembled and left to age in oak barrels for at least three months. After bottling, there is still a short rest period in the cellar before being placed on the market.
THE TASTING
Intense ruby red. The aroma is elegant, with pleasant fruity notes of cherry and red fruits that alternate with hints of aromatic herbs to close with mineral puffs. Soft and fresh on the palate; The tannin is present but well integrated. Good correspondence between aromas and flavour.
FOOD PAIRINGS
It goes well with cold cuts and medium-hard cheeses. A must try with the classic tagliatelle with meat sauce.
