The Product
More than vinegar, this vinegar is a condiment based on white grapes and white wine vinegar to which black garlic has been added. Let’s immediately clarify that black garlic is not present in nature, and its taste is less intense than white garlic.
A slow fermentation process is needed to obtain soft, black cloves that have double the antioxidants of fresh garlic.
The fresh garlic bulbs are left in a humid environment for thirty days and then oxidised for another forty-five days.
THE TASTING
The black garlic-based seasoning is rich and sweet with a pleasant liquorice aftertaste. You can have fun with this vinegar.

This vinegar is very versatile from pasta to bruschetta and as an ingredient for a sauté. Also, excellent raw on pasta with a bit of oil.
The Company

Paolo is very present in all production phases of his vinegar and can often be found in the vinegar factory checking the quality of his products.
Since he was a child, Paolo loved scents such as woods, rooms, fields and rows. These essences took root in him and transformed into the beautiful selection of vinegar and balsamic in Acetomodena products.
