THE WINE
The Franciacorta Brut Milledi of the Ferghettina winery is produced with 100% Chardonnay grapes grown in the vineyards owned by the winery that are located 250 meters above sea level in the heart of the DOCG.
THE WINEMAKING
The strictly manual harvest takes place towards the middle of August and only the selected grapes are brought to the cellar for winemaking. The whole grapes are gently pressed. During the winemaking only the free-run must, which has the best qualitative characteristics, is used for the production of the Franciacorta; the second pressing must is not intended for bottling. The fermentation is carried out in steel tanks at a controlled temperature that varies between 16 and 18 ° C. The base wine rests in the steel tanks until the spring following the harvest when it is bottled for the second fermentation. The wine then ages on the lees for 30 months.
THE TASTING
Straw yellow with golden reflections; the perlage is fine and persistent. The aroma is elegant with citrus notes that leave room for hints of white-fleshed fruit to close with scents of bread crust. Fresh and mineral on the palate, with a good correspondence between aromas and flavor. Persistence is also good.
FOOD PAIRINGS
Perfect as an aperitif, with fish and shellfish. Must try with a seafood risotto.
