THE WINE
The Ribolla Gialla Brut sparkling wine from the Monviert winery is made from Ribolla Gialla grapes, an indigenous Friulian vine grown in vineyards owned by the winery. The vines are located between the plains and hills near Cividale del Friuli. This Ribolla is a fresh, delicate sparkling wine, perfect for all occasions.
THE WINEMAKING
After the harvest, the selected grapes are taken to the cellar for winemaking, which begins with a soft pressing to preserve the integrity of the skins. Before fermentation, the must obtained is coldly decanted. Fermentation occurs in steel tanks at a controlled temperature, which varies between 18° and 20°C. The wine is moved to an autoclave for secondary fermentation, resting on the yeasts for at least six months. Bottling follows, and a few more months rest in the cellar before being placed on the market.
THE TASTING
Straw yellow with light greenish reflections and a fine and persistent perlage. The aroma is fragrant with pleasant floral scents that alternate with fruity notes on a delicate background of yeasts. This Ribolla from the Monviert winery is fresh on the palate slightly aromatic, with a pleasant acid note and a long finish.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, even raw. Try it with tuna tartare.
