THE WINE
Il Sauvignon of the Blazic winery is produced with 100% Sauvignon grapes, grown in one of the most beautiful wine-growing areas of the Friuli Venezia Giulia region; more precisely in the municipalities of Cormons which is located in the heart of the DOC Collio. Here the marly and sandstone soil is commonly called ponca and characterizes the wines of the “Collio Friulano”. This Friulano which was called Tocai not long ago, is able to give very interesting results in the Collio area.
THE WINEMAKING
The grape harvest is strictly manual. Once in the cellar the grapes are destemmed and a softly pressed. The must obtained is decanted. Fermentation follows, and it takes place at a controlled temperature in order to enhance aromas and fragrances. The wine then rests on its noble lees until the following spring and once in the bottle it remains for a few months in the cellar before being placed on the market.
THE TASTING
Golden yellow. The aroma is intense with pleasant notes of white flowers such as jasmine and lily of the valley, which leave room for fruity hints of apple and scents of tomato leaf typical of this vine. Light and fresh on the palate, pleasantly savoury with a good correspondence between aromas and flavours. Persistent.
FOOD PAIRINGS
It goes well with fish, white meats and medium hard cheeses. Try it with fish soop.
