The Wine
The Sauvignon from the Jacuss winery is produced with 100% Sauvignon grapes grown in vineyards owned by the winery that are located in Montina di Torreano in the heart of the eastern hills of Friuli. The terroir and the temperature variations between day and night make this area one of the most suitable for growing grapes in Friuli Venezia Giulia.
THE WINEMAKING
After the strictly manual harvest, the selected grapes are brought to the cellar for winemaking and softly pressed. The fermentation takes place in steel tanks at a controlled temperature of 16 ° – 18 ° C. After decanting, the wine ages on the lees for 20% in French oak barriques and 80% in steel tanks. The wine is assembled and bottled shortly before the new harvest. The bottles rest for a few more months in the cellar before being released on the market.
THE TASTING
Straw yellow, this wine is pleasantly aromatic with hints of elderberry that give way to notes of yellow pepper, closing with scents of tropical fruit and puffs of pink grapefruit. Fresh with a savoury note on the palate, excellent correspondence between the aromas and flavour, and the finish is long and persistent.
FOOD PAIRINGS
The Sauvignon by Jacuss winery goes well with fish, soft cheeses, soups and cold cuts. Must try with asparagus.
