Here’s an easy and tasty spring recipe: Asparagus and Mint Frittata, a simple dish rich in flavour, perfect for a light lunch or an outdoor picnic. This frittata is perfect warm and cold, so you can prepare it in advance and enjoy it whenever you like.
Ingredients (for two people)
- 4 eggs
- 200 g of fresh asparagus
- 30 g of grated Parmesan cheese
- A small bunch of fresh mint
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste

Preparation
Wash the asparagus well under running water and remove the tough part of the stem. Cut them into rounds about half a centimetre thick; to keep them tender and bright in colour, blanch them in salted water for 3-4 minutes, then drain and set aside. In a bowl, beat the eggs with a fork or whisk. Add the grated Parmesan, a pinch of salt and pepper, and the mint leaves torn by hand. The mint will give a fresh and aromatic touch to the frittata.
Heat the oil in a non-stick pan, add the asparagus, sautéing them for a minute. Pour the egg mixture into the pan and cook on medium-low heat for about 5 minutes until the base has set. With the help of a plate or lid, gently flip it over and cook for another 2-3 minutes on the other side. You can eat it warm and soft or let it cool to enjoy at room temperature, perhaps accompanied by a fresh spring salad.
This frittata is perfect for a quick lunch, an appetizer, or a filling for a tasty sandwich. The combination of asparagus and mint makes it fresh and suitable for the spring.
Wine Pairing
I recommend a Friulano, a typical white wine from Friuli Venezia Giulia. It has a fresh taste, is slightly aromatic, and has good minerality, perfect for balancing the asparagus and the herbal note of the mint flavour.
If you prefer something lighter, a Pinot Bianco can be an excellent alternative: it is elegant, smooth, and does not overpower the flavour of the frittata; for a more original pairing, you could also try a Prosecco Brut, which, with its freshness and bubbles, makes the dish even more enjoyable and spring-like.
