The Blauwal Rosé Extra Brut sparkling wine Cesconi winery

My research led me to the Trento area and, considering that sparkling wine always gratifies me when I drink with friends or colleagues, I share with you this beautiful winery.

The winery

The winery was founded in the second half of the eighteenth century and passed down from generation to generation; today Paolo and his sons manage the winery. We are located between Pressano and the Valle dei Laghi, two areas that are close but very different.

On Pressano Hill, the soil has deep, fertile, and mineral layers; the continental climate with strong temperature variations allows for wines with structure and a marked flavor.

The Valle deli Laghi is crossed by the Sarca river which rises on the glaciers and flows into Lake Garda. The climate here is Mediterranean and regulated by the Ora wind, the soils are sandy and of alluvial origin which is great for the cultivation of Manzoni Bianco, Cabernet Franc, and Merlot vines.

 

 

 

 

Blawal Rosé

The Blauwal Rosé is a blend of 70% Chardonnay and 30% Pinot Noir grapes from vineyards located at different altitudes on the Pressanohill. It is a classic vintage sparkling wine refining 30 months in a bottle.

The vineyard

As mentioned, the grapes come from the hills of Pressano, the vineyards are located at an altitude varying between 250 and 500 m. The Pinot Noir, which has a later maturation than the Chardonnay, grows in the higher vineyards. The soils made of compact sandstone mixed with chalky layers give the wines pleasant sensations of fullness and flavor. The vines have an average age of about 30 years. The yield in the vineyard is about 100 q/ha.

The Wine Making

The Chardonnay and Pinot Noir grapes are wine made separately. The whole bunch pressing is very soft and the yield is always below 60% for both varieties. The alcoholic fermentation begins in stainless steel tanks and continues in used barriques. The wine then ages on the yeasts for 8 months followed by the creation of the cuvée by assembling the two starting base wines.

Refinement and degorgement 

The refermentation takes place in the bottle after adding 24 g/l of sugar that develops an overpressure of 6 atm. After a 30-month refinement in contact with the yeasts, the remuage begins, which ends with the disgorging of the bottles.

The topping up, as for all Cesconi sparkling wines, is done with the same starting base wine and the cellar maintains a low dosage to preserve the qualities as much as possible

What can we pair this wonderful glass with?

This wine is ideal with appetizers, fresh cheeses, and cold cuts. Try it with a tomato fish soup like Tuscan caciucco or boiled meat.
