Hello All!
In Italy it is still very hot and I don’t know about you but I’m always looking for tasty recipes, quick to make and good to eat. Today I share with you a great Italian classic … cold pasta with Pesto sauce which is one of my favourite; maybe you already know it, but if you don’t … try it, it’s worth it!
Ingredients for 4 persons:
- 400 gr of pasta (penne are fine but choose the one you like best).
- 200 gr of fresh mozzarella cheese (also bufala is good if you have it ).
- An handful of cherries tomatoes.
- Pesto sauce.
- If you like them, you can add also some green or black olives.
Preparation
- Cook the pasta; once you reach the desired cooking (I suggest you leave it ”al dente”) drain it and let it cool.
- Chop the mozzarella and the cherry tomatoes into small pieces.
- Once the pasta is cold, add the mozzarella, the cherry tomatoes and olives; mix well
- Add the pesto and mix well
- Let it rest for at least one hour in the fridge.
- Remove from the fridge, add a couple of basil leaves and serve!

- Müller Thurgau – 2018 cantina Istituto Agrario San Michele all’Adige
- Riesling Aristos DOC – 2016 cantina Valle Isarco
- Collio DOC, Sauvignon – 2017 cantina Ronco Blanchis
