We are now in the heart of the autumn seasons. Pumpkins, chestnuts and chestnuts are the products that are the masters of this wonderful time of the year. Today I propose you a very special dessert, of which surely you will have heard a few people and probably will even make your nose turn up! The marron glacé cheesecake! It may seem a strange combination of flavors, but trust me, the end result is nothing short of delicious.
Ingredients
– 250 gr of dry biscuits
– powdered ginger as needed
– 125 g of butter
– 2 eggs
– 500 gr of cow’s milk ricotta
– 125 gr of Greek yogurt
– 250 gr of chestnut cream
– 100 g of dark chocolate
– milk as required
– cream to taste
– marron glacé
Preparation
Start by coarsely chopping the dry biscuits in the mixer and transfer them to a bowl. Add the softened butter, an egg and ginger. Mix everything with a spatula until you get a smooth and homogeneous mixture. Line a mold of about 24 cm in diameter with baking paper and spread the biscuit mixture on the bottom and edges, with the aid of the back of a spoon. Whip the ricotta in a bowl with the yogurt, the chestnut cream and the remaining egg, working with a hand whisk. Pour the ricotta and brown cream into the shell of crushed biscuits. Level it, beating the mold on the work surface. Put the cheescake in a pre-heated oven at 180 degrees for about 45 minutes. After having taken it out, let it cool. Chop the chocolate and dissolve in a bain-marie with 2-3 tablespoons of milk or cream. Use the chocolate mousse obtained to decorate the dessert. One idea is to vacuum the chocolate with a syringe and draw a grate on the surface of the cake. Decorate with marron glaces and thin strips of fresh orange peel. Serve as desired with the whipped cream.
