The red wine cake

This red wine cake is a soft and fragrant sweet. The flavor of the dough is reminiscent of the intense and spicy of mulled wine. A delicious dessert to be enjoyed all year long!

Ingredients

Red wine 150 ml

Flour 00 250 g

Medium eggs 4

Butter at room temperature 250 g

Sugar 250 g

Cinnamon powder 1 teaspoon

Ground cloves 1/2 teaspoon

Bitter cocoa powder 20 g

Dark chocolate 150 g

Baking powder for cakes 16 g

For decoration

Fresh liquid cream 200 g

Powdered sugar 20 g

Vanilla bean seeds 1/2 berry

Preparation

Start by slicing the butter at room temperature in cubes and placing it in a bowl. Add the sugar and mix everything until a cream is obtained. Divide the yolks from the whites (keep the egg whites, as they will be used later) and add the yolks to the mixture a little at a time. Then pour the cinnamon and powdered cloves. Add the bitter cocoa and then the red wine. Stir until a cream with a uniform color is obtained and at this point transfer the mixture into a bowl.

Pour the sifted flour mixed with baking powder and mix well with a spatula to avoid the formation of lumps. In a bowl whipped with an electric mixer the egg whites. Once assembled, gently unite the mixture in three steps with the spatula. Then with a knife cut the dark chocolate and add it to the dough you have obtained. Grease and line a 22 cm diameter cake pan with baking paper and pour the mixture into it.

Cook in a preheated 150 ° static oven for 90 minutes. Just before serving, prepare the decorations: slice the vanilla bean lengthwise and then remove the inner seeds with a small knife. Pour the fresh liquid cream into a cold bowl and whip it together with the icing sugar. Add the vanilla seeds and continue. When the cream is ready, place the red wine cake, which will have cooled, on a platter or on a backsplash; finally, with a sac-à-poche with a knurled nozzle, decorate with the cream that you have prepared and finally serve.
