The cold yogurt cake

  The cold yogurt cake is a sweet fresh and light taste, perfect for this time of year. It’s very easy and quick to prepare, and you do not even need an oven!

In this case it is enriched with berries, but since it is a neutral base you can add the cover you prefer!

Ingredients

For the base

300 g of Digestive or dry biscuits

170 g of butter

30g of brown sugar

For the cream

700 ml of natural yogurt

450 ml of whipped cream for whipping

12 g of leaf gelatine

70 g of fine or icing sugar

1-2 teaspoons of lemon juice

60g of milk

Decoration

Fruits of forest or decoration to taste

Method

For the realization of the cold yogurt cake, line a 20 cm diameter hinge mold with parchment paper.

Melt the butter and let it cool, keeping it aside. Meanwhile, pour the dry biscuits into the mixer and blend them until they are powdered. Transfer the chopped biscuits into a bowl, add the brown sugar and the warmed butter. Stir to obtain a pasty mixture and transfer it to the mold. Press it well on the bottom with the back of a spoon to make the base. Place the base in the refrigerator and leave it to harden at least 30 minutes.

Now place the gelatine sheets in a large bowl filled with cold water and allow them to soften for about 10 minutes. Meanwhile, heat the milk in a saucepan and once the gelatin is softened, squeeze it and pour it into hot milk over a low flame. Mix with a whisk to thoroughly dissolve the gelatine. Keep aside for a moment and allow the mixture to cool. Now whip the fresh liquid cream and sugar until it is a frothy mixture. Pour the yogurt into a bowl, add the milk in which you have melted the jelly and which will have cooled in the meantime. Stir with a spatula to mix the mixture and finally add the cream that you have previously assembled, stirring gently from the bottom to the high so as not to disassemble it.Pour the cream obtained in the mold with the base that will be firmed in the meantime, level the surface with a spatula and put again in the refrigerator to harden for at least 5 hours. Once the cold yogurt cake is ready, garnish it to taste with the berries and serve.

This delicious dessert can be accompanied by some good white wine, frizzy! Good day!
