Shrimp and zucchini rice, a summer dish with a delicate flavor, ideal for any occasion. A simple recipe that will win over your guests!
Ingredients
Rice 360 gr
Zucchini 350 gr
Shrimp 300 gr
Vegetable broth 1 Liter
Shallot 1
Dry white wine 1 glass
Extra virgin olive oil q.b.
Salt up to q.b.
Pepper as needed.
Chopped parsley q.b.
Method
Prepare the vegetable broth making it simmer slowly, so as to keep it warm. Wash the courgettes, clean them and cut them into small pieces. Brown the chopped shallots in a large pan with a drizzle of extra virgin olive oil. As soon as it is golden, add the zucchini and cook for a few minutes, until it is wilted. Add the rice and toast it until it is shiny and transparent. Add the white wine and stir with a wooden spoon until it has evaporated. Add the hot broth gradually, season with salt and pepper and continue stirring occasionally. While cooking the rice, clean the prawns by removing the outer shell and the inner intestine, wash them under running water and add them to the rice 5 minutes before the end of cooking. Stir in the butter, add the chopped parsley and bring to the table hot.
