I don’t know if everyone knows it, but I am in love with pasta and spaghetti; in my opinion they reflect the Italian expression of good food.
The recipe I share with you today is quick and easy; spaghetti carbonara with stracciatella cheese, fried sage and chopped pistachios.
Ingredients for 4 people
- 360 grams of spaghetti
- 2 eggs
- 40 grams of grated parmigiano cheese
- 250 grammi di stracciatella cheese (typical Italian cheese made with mozzarella and cream; if you cannot find it use Mozzarella and add some cooking cream)
- Sage
- 40 grams of pistachios
- 100 grams of bacon
- olio to fry the sauce, sale e pepe.
Preparation
While the pasta is cooking, fry the bacon in a pan without adding oil and remove the excess fat; with a fork beat the egg yolk with the parmesan cheese and a generous amount of pepper. Fry a few leaves of sage in hot oil and make sure they are crispy. Chop the pistachios roughly and toast them in a saucepan without seasoning.
When the pasta is ready, drain it and pour it in a pan add the bacon; add the egg and parmesan mixture and stirring quickly. Add the stracciatella. Dish it out and before to serve, decorate with fried sage and chopped pistachios.
Wine pairing
This dish very rich in flavors so I recommend you choose a still white wine of great freshness such as a chardonnay, but also with a Classic Method sparkling wine.
