Three quick and tasty recipes

a super hot week has started, and I don’t know how you feel, but I have even less desire to cook than usual, so I’m sharing three quick and tasty recipes that don’t require any cooking but are still super tasty.

Lettuce wraps for 4 people

All you need is eight large leaves of lettuce; I use iceberg lettuce with large leaves, a large burrata, and anchovies.

Wash the lettuce leaves well and dry them with a cloth or kitchen paper. In a bowl, cut the burrata and anchovies into small pieces and mix to form a well-blended mixture. You decide the amount of anchovies according to your tastes; I like them a lot, so I tend to abound.

Spoon a generous amount of mixture into each lettuce leaf and roll it up as if it were a roulade. Arrange everything on a plate and leave to rest in the refrigerator for at least 30 minutes. Serve with a mixed salad, and enjoy your meal.

What to drink? Excellent with white wines, I suggest Paolo Caccese’s Malvasia

Smoked salmon rolls for 4 people

200 gr of smoked salmon cut into thin slices, a nice large burrata cheese, and capers.

Cut the burrata into small pieces in a bowl and mix with a handful of capers. Again, as above, I’ll let you decide the amount of capers according to your taste. If you take capers in salt, wash them well before using them; otherwise, the dish will become too salty.

Arrange the salmon slices on a plate, and place a generous amount of burrata in the centre of the piece with a spoon. Close the slice into a roll or pocket, as you prefer. Transfer everything to a plate, garnish with a few capers and leave to rest in the refrigerator for at least 30 minutes. Serve with a salad.

In this case, I would drink a bubble like the brut nature of the Vigna Lenuzza winery.

Cooked ham rolls for 4 people

Four slices of cooked ham, 100 g of gorgonzola, and milk.

Have the slices of ham cut a little thicker so the rolls don’t break; arrange them on a plate. Cut the gorgonzola into small pieces and put it in a bowl. Add a drop of milk and mix everything until the gorgonzola melts a little and becomes almost a cream.

Spread the cream on each slice of ham. Roll up the ham as if it were a roll and put it in the fridge to rest for at least thirty minutes. Remove from the refrigerator, and cut the ham into at least 2 centimetres wheels before serving. Serve with a salad.

You can also pair it with a red; I suggest the merlot from the Colmello di Grotta winery.
